After marinating, grill them for about 5 minutes, flipping them halfway through.

How To Grill Shrimp Just Right

First, make sure to thaw your shrimp the night before in the fridge. But if you forgot to do so, dont worry. Just run the frozen shrimp under cold water for 5-10 minutes in a colander. When theyre completely thawed, gently pat them dry with a paper towel. Then lets get grilling!

  • In a mixing bowl, toss the thawed shrimp with 80% of the marinade until theyre completely coated.
  • Timing is key. Let the marinated shrimp sit in the covered bowl for about 30 minutes in the fridge.
  • Pop on skewers. Thread the shrimp on skewers and brush some more of the marinade on top.
  • Its grilling time. Heat a grill or grill pan on medium-high heat. Then place the skewers on the grill for 2-3 minutes on each side. They cook fast, so keep an eye on them!
  • Drizzle. Transfer the skewers to a place and drizzle the remaining marinade on top for extra garlicky flavor.

    Tips For Grilling Shrimp

  • Dont marinate the shrimp for longer than 2 hours. The acid from the lemon juice can actually cook the shrimp without any heat needed, which is what happens with a long marinade time.
  • Broil the shrimp in the oven if you dont have a grill. Once the broiler is preheated, place the shrimp skewers on a sheet pan coated with cooking spray or lined with parchment paper. Broil for 2-3 minutes, then flip and broil for another 2-3 minutes watching it closely so it doesnt over-cook.
  • Peel and devein the shrimp before you marinade them. Otherwise all the marinade will be on the outside of the shrimp only. I prefer to leave the tails on, but you can remove them if you like.
  • Dont overcook the shrimp. Shrimp cook super fast, and only need 2 to 3 minutes each side. If you overcook them, they lose their juiciness and become rubbery. Th shrimp skewers are cooked when they turn an opaque pink, they are overcooked if they start to curl up.
  • How Long Can You Marinate Shrimp

    Marinated Shrimp

I recommend marinating the shrimp for 30 minutes or less since there is lemon juice in the marinade. The acid in the lemon juice will actually start to cook the shrimp if left to sit for too long and make the shrimp mushy.

That being said, the shrimp can be marinated for a few hours and up to overnight as long as you omit the lemon juice. Simply add the lemon juice up to 30 minutes before planning to cook. In either case, marinate in the fridge until youre ready to start cooking.

  • Solution #: The Baking Soda Trick

    Serious Eats / J. Kenji López-Alt

So far, Id been looking at methods of improving browning. What if I were to instead look at methods to keep the shrimp juicier and plumper as they cooked? I recalled some testing Id done on shrimp while developing a recipe for wonton soup. In that recipe, I recommend tossing the shrimp with a mixture of salt and baking soda and letting them rest for at least 15 minutes. The salt helps the shrimp retain moisture as they cook, while the baking soda gives them a firm, crisp texture. I wondered if the same method would work for other cooking techniques, so I gave it a shot.

    Serious Eats / J. Kenji López-Alt

I grilled a batch of shrimp treated with baking soda next to a batch of shrimp with no baking soda and compared them side by side. Turns out, it works quite well. No question, the baking sodatreated shrimp came out plumper and juicier than their untreated brothers. Whats more, the baking soda actually helped the shrimp brown faster as well. The Maillard reaction, responsible for producing those delicious browned flavors, takes place faster at higher pH levels. Alkaline baking soda raises the pH, giving you superior browning in less time.

Should I Grill Shrimp With Shell On Or Off

It can be done either way, but each method has its own benefits.

    • Shell off is best when using a marinade. This way it can fully penetrate the shrimp, giving you the most flavour.
    • Shell on is best if you will be using jumbo shrimp since this keeps them tender and juicy. Otherwise, the moisture will escape during the longer cooking time.

Is It Better To Grill Shrimp With Shell On Or Off

The second solution is not to peel off. Cook the shrimp with their shells intact to ensure juicier, tender shrimp. As a temperature buffer, these shells aid in keeping the meat from overcooking while also developing a lot of flavor in them.

The Best Way To Grill Shrimp

When cooking shrimp over direct heat, I always recommend that they be done quickly. Grilling them for as long as indicated below depending on their size is appropriate for the largest and most succulent shrimp. Grill small shrimp for about 5 to 8 minutes, or until they are opaque. Grill your shrimp for 7 to 9 minutes, or until they are opaque, without the shells on if you prefer to cook them that way. Because the shells contain all of the delicious juices, grilling shrimp in them ensures that the meat tastes much more moist and flavorful.

    How To Store Shrimp:

Properly storing your shrimp before, during, and after grilling is very important. Bacteria grows very quickly at temperatures between 40-140 degrees. You will always want to think about keeping your food either colder than 40 degrees or warmer than 140 degrees. Food should only be left at room temperatures for a maximum of 2 hours.

Grilled shrimp storage should follow these guidelines:

    • Tightly pack: Store shrimp in a shallow airtight container or heavy-duty aluminum foil or plastic wrap.
    • Refrigerator: 3-4 days cooked, 1-2 days raw
    • Freezer: 3 months cooked, 3-6 months raw
    • To re-heat cooked shrimp from frozen: Thaw in the refrigerator and then keep 3-4 days max before cooking. Do not re-freeze. If you thaw in the microwave or in cold water, it needs to be eaten right away, then discarded.

    For The Grilled Shrimp Marinade:

    • Olive Oil Use a light olive oil for neutral flavor, or try avocado oil.
    • Lemon Juice Fresh lemon juice tastes outstanding in this grilled shrimp skewers marinade, but use bottled if necessary. For extra lemon flavor, feel free to add in the lemon zest, too. If you have limes on hand instead of lemons, feel free to swap the lemon juice for lime juice.
    • Garlic Cant make garlic shrimp skewers without it! Mincing fresh garlic tastes the best, but you can use the jarred kind to save time.
    • Italian Seasoning Use a pre-made version, or make homemade Italian seasoning. Alternatively, you can chop up some fresh herbs, such as fresh parsley, basil, or thyme.
    • Smoked Paprika Regular paprika will work if thats what you have, but smoked paprika adds the best flavor for the grill.
    • Sea Salt& Black Pepper
