What Is The Best Way To Fry Shrimp

  • Make sure the the oil is as close to 350 degrees F as possible when you place the shrimp in the oil. The temperature of the oil will drop when the cold shrimp are placed in the oil. Dont worry, the oil will come back up to the correct temperature as the shrimp cook.
  • Watch your heat, you dont want the oil to go over 400 degrees F. Be sure to use a frying thermometer so that you can constantly monitor the temperature.
  • Use a kitchen spider tool to place the shrimp in the oil and take them out again.
  • Fry around 5-7 shrimp per batch depending on the size of your pot.
  • As the shrimp cook, make sure to stir them a bit so they do not clump together.

For instance, your average grade cherry shrimp will sell for between $1.50 and $3.00 per shrimp. However, higher grades of cherry shrimp may sell for up to $8.00 per shrimp.

Even when it comes to cherry shrimp, there are various kinds and colors, and there is more than just the cherry shrimp out there.

There are also many grades of shrimp. These range from SSS to C, and the higher the grade, the better the shrimp, the bigger the profit.

You should do some research on this front to figure out what type of shrimp to sell, especially in terms of that profit margin.

  • Blend egg white and yolks: In a second medium shallow dish whisk eggs until well blended.
  • Add panko to a dish: Pour panko into a 3rd shallow dish .
  • Heat oil in pot: Preheat vegetable oil in a large pot to 350 degrees while you coat shrimp. Note that shrimp should be wet on the exterior .
  • Dredge shrimp through three coatings: Dredge shrimp in flour mixture on both sides. Transfer to egg mixture and coat on both sides. Then finish by coating in panko on both sides, while pressing into panko so it adheres well.

    Use one hand to coat the shrimp in the egg mixture. Pick up the shrimp with the wet hand and place it in the dry mixture. Now use your other hand to gently coat the shrimp.

    Because you arent going back and forth with both hands they arent getting goopy and gross. One hand will have egg and one hand flour but not a big lumpy mess.

    Its not anything revolutionary but it makes a big difference in the mess level of battering and frying.
