Do You Season Or Marinate Shrimp Before Grilling It

You can and should marinate or season your shrimp before grilling it. Marinades generally take a little longer. You should marinate shrimp for no less than 30 minutes, but you can quickly toss shrimp in seasoning just before grilling.

If you opt for a marinade, you can generally let your shrimp sit, refrigerated, for up to eight hours. Theres an exception, however, if you use citrus in the marinade. Because its acidic properties break down proteins, shrimp can get soggy and mushy if its marinated in citrus juice for more than two hours.

How To Grill Scallops

Scallops seared on a hot grill are second to none. Heres how to do it:

  • Select larger sea scallops versus the smaller bay scallops. Scallops are large enough to grill on the grates, but often I use a griddle or grill pan on the grill to ensure I do not inadvertently lose one to the lit coals below.
  • Remove the hard side muscle. You dont want to grill this!
  • Pat the scallops dry and oil lightly. Water interferes with the scallops ability to sear on a hot grate.
  • Grill on direct high heat for 4 to 5 minutes. Scallops only need 4 to 5 minutes to cook, flipping once, and are done when they turn opaque. Once they go on the grill, its best not to leave them alone. They cook fast.

    Ive always thought shrimp to be one of the best shellfish on the market, being both rich and flavourful. Try to track down large shrimp if possible jumbo and tiger shrimp are always my top choices. If you dont feel like tackling the deveining before you begin, ask your fish market to do it for you.     We like to let the shrimp go a little long on the first side, about 1 and a half minutes, then flip for go for another 30 seconds. If youre cooking over really high heat this will be plenty of time.

    If you cant develop much char in that time, thats okay! Its better to pull the shrimp on time and then it is to leave them on longer in order to chase the char. Plump, tender shrimp without char are much better than overcooked rubbery shrimp with a char.

    What To Do With Shrimp Shells

    Cook in the shell whenever possible, especially when you grill. The shells add a lot of flavor to the meat, and they protect it from quickly overcooking.     When buying clams, make sure all the shells seal tight. If you find one that does not, discard it. When youre ready to grill, heres what to do:

  • Grill cleaned clams over direct high heat for 5 minutes. Make sure the lid is down. After 5 minutes check the grill and remove any clams that have opened.
