You can and should marinate or season your shrimp before grilling it. Marinades generally take a little longer. You should marinate shrimp for no less than 30 minutes, but you can quickly toss shrimp in seasoning just before grilling.
If you opt for a marinade, you can generally let your shrimp sit, refrigerated, for up to eight hours. Theres an exception, however, if you use citrus in the marinade. Because its acidic properties break down proteins, shrimp can get soggy and mushy if its marinated in citrus juice for more than two hours.

Tips For Buying Natural Shrimp
When purchasing shrimp, its important to be sure you are buying a natural, chemical-free product. Shrimp is notorious for being treated with chemicals and soaked in water to it becomes larger and be sold for a higher price.

Heres What Makes Grilled Jumbo Shrimp So Awesome:
Ive always thought shrimp to be one of the best shellfish on the market, being both rich and flavourful. Try to track down large shrimp if possible jumbo and tiger shrimp are always my top choices. If you dont feel like tackling the deveining before you begin, ask your fish market to do it for you. I bet theyll be happy to oblige.
The recipe calls for a half-cup of each herb, but you may wish to adjust these quantities to taste. I think oregano, basil and mint complement each other perfectly, but Ive also made the sauce using only mint. Play around with your herbs when you go to make it. Shrimp tend to cook quickly, especially on a hot grill, and I usually gauge doneness by colour and firmness. Youll know your shrimp are done when they take on that pinky-orange hue and are firm when poked.
Grill Shrimp With High Direct Heat
You want to hit shrimp hard and fast with high, direct heat. They will cook through in less than 2 minutes, so its a race to develop a nice exterior char as quickly as you can.
- For grills , you will want to pre-heat with the lid down to get the metal grill grate really hot. Then open the lid and cook the shrimp over high heat with the lid up.
- For campfires, build up a hot bed of embers or coals and drop the grill grate down as a low as it will go.
We like to let the shrimp go a little long on the first side, about 1 and a half minutes, then flip for go for another 30 seconds. If youre cooking over really high heat this will be plenty of time.
If you cant develop much char in that time, thats okay! Its better to pull the shrimp on time and then it is to leave them on longer in order to chase the char. Plump, tender shrimp without char are much better than overcooked rubbery shrimp with a char.

Should You Leave The Shell On When Grilling Shrimp
If you are cooking the shrimp in a simple fashion with no marinade or seasonings, then leaving the shell on will protect the moist meat inside. This allows you to prepare the shrimp in a peel-and-eat type of fashion, and for many, this is the preferred way to cook shrimp. Cooking the shrimp in their shells can intensify the shrimp flavor – so if you are looking for a strong shrimp flavor with moist and tender seafood, then the answer to “should you leave the shell on when grilling shrimp” is a resounding yes.
Solution : Colander Method
If your shrimps are frozen, its ideal not to microwave the shrimps to defrost. Or even use hot water or heat. Because that causes the shell to stick to the meat more than before.
What you can do is take a colander and put the shrimps in it. And store the colander in the refrigerator overnight. Keep a bowl underneath to catch the dripping water. This way youll have the shrimps defrosted gently.
After a day, youll see the shell and the meat has a kind of separation. This is your chance to start peeling the shells. The colander process will need some time, but the result is worth the wait. Just dont try to force the shrimps open!

Instead, we rely on visual cues: If the shrimp is pink and pearly looking, firm to the touch and just slightly translucent in the center, its done.

What To Do With Shrimp Shells
Cook in the shell whenever possible, especially when you grill. The shells add a lot of flavor to the meat, and they protect it from quickly overcooking. Besides, sitting around a table peeling and eating shrimp is a party right there. But if you do choose to peel the shrimp before cooking, save the shells and freeze them to make seafood stock for chowders and stews. Leave the shell on the tail to make a handle if youre serving shrimp with a dip.

Also, your shrimp wont cook evenly and may be unsafe to serve. If you try to cook frozen shrimp, the outside can look done while the insides remain raw.
To thaw frozen shrimp, put them in a sealed plastic bag and submerge them until theyre fully thawed. It only takes 10 to 20 minutes to thaw frozen shrimp. After the shrimp have fully thawed, remove excess water by patting them with paper towels. Once your shrimp are thawed and the excess water is removed, youre ready to season and grill.

Variations On Grilled Shrimp:

So far, Id been looking at methods of improving browning. What if I were to instead look at methods to keep the shrimp juicier and plumper as they cooked? I recalled some testing Id done on shrimp while developing a recipe for wonton soup. In that recipe, I recommend tossing the shrimp with a mixture of salt and baking soda and letting them rest for at least 15 minutes. The salt helps the shrimp retain moisture as they cook, while the baking soda gives them a firm, crisp texture. I wondered if the same method would work for other cooking techniques, so I gave it a shot.
