How to Grill Salmon in Tin Foil

Salmon is a rich and slightly oily fish that can take a variety of seasonings and marinades very well. First, be sure to dry the salmon well and season with kosher salt, from there, you can your seasoning or marinade of choice. Here are a few options to season your salmon fillet:

Heat Clean And Grease The Grill

  • Heat the grill to 375 degrees F with the lid closed.
  • Once the grill is fully heated, clean it thoroughly with a wire grill brush. Its easiest to remove old food after the grill is super-hot and the old bits of food start to char and crumble. A clean grill ensures direct contact with the foil which prevents sticking.

How Prep Salmon For The Grill

For even cooking, youll want to let the salmon come to room temperature for 20 minutes before grilling.

Set the salmon on a paper towel-lined pan and pat dry. A dry surface speeds up the searing process and prevents sticking. If its marinated, blot off as much marinade as possible before grilling.

Right before placing it on the grill, lightly rub the salmon with olive oil on both sides, and sprinkle with kosher salt and freshly ground pepper. Always season fish just before grilling to avoid moisture loss and flare-ups.

What Temperature To Cook Salmon

The FDA advises salmon should be cooked to an internal temperature of 145 degrees Fahrenheit, HOWEVER, if you cook your salmon to this temperature, it will be dry, chalky and overdone due to the carry over meaning the salmon will continue to cook once it is removed from the heat source.

Americas Test Kitchen, on the other hand, advises cooking salmon to 125-130 degrees F to avoid overcooked salmon. I like to cook my salmon somewhere in between, to about 130-135 degrees F which always results in perfectly juicy salmon after a 5-minute rest. During the 5-minute rest, the salmon will continue to cook once pulled from the grill and rise about 5 degrees. Always take this carry over into consideration when taking the temperature of your salmon or any protein.

Take the heat out of the kitchen by making grilled salmon in foil. Enjoy packets of savory juicy salmon slathered in garlicky butter and sprinkled with fresh chives, steamed to perfection on your grill. Hint: you can make it in your oven, too!

I love the idea of cooking outside and grilling gives such great flavor to meats, veggies and even fruit. Burgers, chicken, and steaks are so yummy on the grill. Even plain ol hotdogs taste better on the the grill. Buuuuut

However, sometimes grilled meals can be a two person job, right? Someone needs to be outside tending the grill, and someone needs to be inside making the rest of the meal. If youve ever tried to do both jobs yourself, you know what Im talking about, right?

Go outside, get the grill heating. Go inside to prepare whatever youre grilling. Go outside and clean off the grill. Go inside and fetch whats being grilled. Go outside and put it on the grill. Go inside to prep the rest of dinner. Go outside to check on the grilling. Back inside to check the veggies . Etc. Etc. You get the idea. Youre running around like a crazy person!

When the timer goes off, take the packets off the grill, open, and enjoy. You can turn the grill off right awayno need to burn off any drippings or grease. Just sit down and have a nice leisurely meal featuring this perfectly done, absolutely delicious salmon, buttery, garlicky, and so flavorful.

Frozen Or Fresh Salmon For Baked Salmon Foil Packets

You can use frozen or fresh salmon for baked salmon foil packets! I prefer fresh, simply because I can skip defrosting it, and usually find great deals at warehouse clubs.

TIP: If you decide to use frozen salmon, you will need to thaw it before baking or grilling easy salmon foil packets.

To thaw frozen salmon fillets, you have two options:

  • Fill a bowl with cool water and place the sealed salmon fillet inside. This will take around 30 minutes to defrost. If it isnt done, change out the water and do it again.
  • Refrigerate the salmon patties the night before you plan on cooking and it should be defrosted by then.
  • You can use fresh or frozen salmon with most salmon foil packet recipes, so just grab what you have on hand.

    Types Of Salmon To Choose From

    • Wild or farmed? You can choose wild or farmed, its up to you. Farm-raised salmon tends to be milder in flavor and more fatty/buttery in texture, while on the other hand wild salmon can be a little more spendy, but is leaner, pinker, and higher in minerals such as zinc and iron. Both are delicious!
    • Skin on or off? Choose a salmon with the skin still on it. This will help keep the salmon extra flavorful, plus its easier to grill.
    • Different varieties of salmon. The most common types of salmon youll find at the grocery store are King/Chinook, which is large with a high fat content, Sockeye, which is more red/orange in color, Coho/Silver salmon, which has bright red flesh, and Atlantic Salmon, which is always farmed.

  • Mix together ingredients for apricot mustard sauce.
  • Remove 2 tablespoons of sauce and set aside.
  • Lay salmon skin down on large piece of foil and brush remaining sauce on.
  • Bring up long sides of foil and roll seam together on top. Roll together shorter ends.
  • Grill for 10 minutes. Open up packet and brush on reserved marinade. Place salmon under broiler for 1-2 minutes, or until glaze bubbles.

    You might have heard rumors linking aluminum foil to certain chronic illnesses including the Alzheimers disease: which is basically the intense sickness of the mental health, but the general consensus in the scientific community is that aluminum foil is totally safe to grill, bake or roast with.

    Not just aluminum foil, but other aluminum cookwares as well. Even aluminum materials such as juice can and bottles are safe to drink from.

    The linking is merely a speculation as there are far too many factors to consider before aluminum can actually be singled out as the main culprit.

    The salmon cooking time will depend on its thickness. A large, thick piece of salmon, closer to 1 ½ inches thick will take around 15-20 minutes at 400 degrees F. It will require the same time if baking in the oven.

    Smaller, thinner, salmon, around 1-inch thick, will take closer to 10-15 minutes at 400 degrees F. Again, it will require the same time if baking in the oven.

    • Classic grilled salmon comes out with a crispy top and charred flavor. If you love a crispy top to your salmon, youll want to use this method instead. Cook it right on the grill grates, then flip and finish cooking.
    • Grilled salmon in foil comes out perfectly moist. The top does not crisp up here, and you wont get as much charred grill flavor because the foil acts as a barrier. But this method is extremely easy and the fish comes out incredibly tender and delicious!

    The difference is almost like the difference between a pan seared salmon and a poached salmon. Cooking in foil makes things moist instead of crispy, but its incredibly easy.     The Best Salmon For Grilling

    Whether youre working with wild-caught or quality, responsibly raised fish, the cut of salmon will make a difference. Here is what I look for grilling:

    • Center-cut salmon fillet: The center-cut part of the fish t is thicker and more uniform so it will cook more evenly
    • Skin-on salmon: Particularly if youre cooking it directly on the grill, its a good idea to use skin-on fish fillets. The skin holds the salmon together as it cooks over dry heat, and it also imparts good flavor as it releases fat that keeps the fish moist. But if you only have skinless salmon fillet, I recommend grilling the fish in foil instead.

    Foil Pack Grilled Salmon With Lemony Asparagus

    Grilling fish can be a totally daunting process. Worrying about cooking it correctly and not tearing apart the delicate fillets can bring unnecessary stress to your cookout. With addition of asparagus, these foil packs make grilling a salmon dinner a breeze. Cooking the packs over high heat will help to sear the fish while generating enough steam to fully cook the salmon and the asparagus. Your salmon will cook slightly faster if your pieces are thinner, but you can check for doneness by piercing a sharp knife into the fish in the foil. If the fish is flaking and light pink then youll know your salmon is done.

    You could serve these right out of the foil or you could use a bit more foil and make some Campfire Potatoes or make some simple grilled corn.
