This glaze needs a little extra punch to round out that sweet peach jam, so it includes a few dashes of Tabasco sauce, garlic, soy sauce, and Dijon mustard. It is the perfect balance of sweet, savory, plus that classic Tabasco kick!

OK so you can MAKE this shrimp recipe ahead of time but you cant bake it ahead of time. Pre-cook the bacon and wrap your shrimp, even make the BBQ glaze ahead of time and then store it all in your refrigerator.
All you need is about 20 minutes to bake and glaze these shrimp from start to finish so do that right before you need them. If by any chance you have leftovers you can reheat these bacon wrapped shrimp in the microwave, just try not to put them in for too long or the shrimp will get rubbery.
I highly doubt that youll need to worry about leftovers with this recipe, but just in case, Ive got you covered.

Hello! Today Im sharing a simple recipe for barbecue bacon wrapped shrimp skewers. Which is a mouth full. Plenty of times I have accidentally referred to them as shrimp wrapped bacon now that would be a recipe to see.
This recipe is a hit in our house because it covers both of my kiddos favorites. My 8-year-old daughter cant get enough shrimp. And I dont think I even tried shrimp until high school. This mama is not complaining. She also loves roasted broccoli. And my three-year-old son is the pickiest eater, but happens to love bacon. So its a win-win.
We made barbecue bacon wrapped shrimp a few times over the holidays. Once as the main dish served with plenty of dipping sauces alongside cheddar & chocolate fondue. So good! And we also made it on New Years Day. Its the perfect meal or appetizer to serve for special occasions. And its so easy to grab the ingredients.
Choosing Shrimp For This Recipe
For this recipe, I am using raw large shrimp that have been deveined and still have the tail on. Specifically, I am using the Kirkland Signature frozen shrimp, so if you are a Costco shopper, you should be find the exact shrimp I used.
You might be in a place where you can find great quality seafood and if you are, I would suggest going there. While the grill and bacon may make this recipe a little forgiving on what shrimp you use, the ingredients can impact final flavor. No matter where you get your shrimp, make sure to appropriately clean them.
I am also a firm believer in using what you have so if you have some shrimp in your freezer you need to use, use that! There is one exception. This recipe will not work great for precooked shrimp. This does require a bit of time on the grill to ensure that the bacon is cooked and pre-cooked shrimp is precooked. So, you are likely to end up with overdone shrimp if you fully cook the bacon, which you always want to do.

Selecting The Best Shrimp

When selecting shrimp, its perfectly fine to go to the freezer aisle instead of the butcher counter. The ones in the case have been frozen and thawed anyway.
Size is important! You want your shrimp large enough to wrap the bacon around without overpowering them and not so small they will overcook and become rubbery.
Look on the bag for the size count you want somewhere in the 16/20 range. This means that there are 16-20 shrimp per pound, which is a nice size for our bacon wrapped shrimp recipe. They are about 3-inches in length not so large you need a fork and knife to cut them, and easily threaded on the skewers.

How To Make Grilled Bacon Wrapped Shrimp
Preheat grill to medium-high . Cut bacon strips in half crosswise and grill over indirect heat for 5-6 minutes bacon until slices are starting to crisp, but still pliable. Transfer to clean plate and leave grill on.
Toss peeled and deveined shrimp in olive oil, salt and pepper.
Wrap each shrimp with a piece of partially cooked bacon and thread onto skewers.
Grill shrimp with the lid closed over indirect heat 8 to 10 minutes, turning halfway through cooking time, until shrimp are pink and bacon is cooked as desired.

Grilled Bacon Wrapped Shrimp Summary
Grilling shrimp is super fast and this is an easy recipe, but a bit of preparation makes these delicious. First, start with a brine and let the shrimp soak in a bit of sugar and salt. If using wood skewers, this is the time to allow them to soak in some water, as well.

Yes you can in fact most of my recipes are made with precooked and frozen jumbo shrimps.
The precooked shrimps are not cooked to my liking and we cant eat it that way even in cold salads therefore I cook them some more. It will get ready in less time than fresh shrimps would and you to skip the shrimp smell you deal with when cooking from fresh.

After the shrimp is brined, I add it to a mixture that contains honey, lime juice, paprika, and ground cayenne pepper. This helps to provide balance to the savory flavor bombs that are shrimp and bacon.
When working on this recipe, I did like it without the glaze, but I thought it needed a bit of balance. To add balance, I decided to use this glaze that has sweet, citrus, and spicy notes. The shrimp only spends a few minutes in this mixture, but it is all it needs.
Honey adds some sweet. Lime adds some citrus, and finally, the cayenne and paprika add just a touch of heat. None of these flavors are bold in the final skewers, but help make it a well-rounded dish.
How Do You Get The Bacon Extra Crispy

This is a trick that I use when I am wrapping most anything with bacon. You need to pre-cook the bacon, just for a few minutes to get it going. Especially when youre talking about a shrimp recipe like these BBQ Bacon Wrapped Shrimp that only take 10-12 minutes to cook.
Because bacon is not going to get crispy in 10-12 minutes, you need to give it a head start. For example, if you wrap the shrimp with raw bacon and bake it, the shrimp will be done before the bacon is crispy. Certainly you could keep cooking the shrimp until the bacon is crispy but then your beautiful, large shrimp will be overcooked.
Pre-cook the bacon in a skillet or in the oven just for about 7-8 minutes. It will still be very flexible and wont seem cooked at all but trust me, its a head start.
As a result, when you go to bake the shrimp it will all be done at the same time. Pretty smart right? Rubbery, not crispy bacon is not a thing for me so getting the bacon super crispy is one of the keys to this recipe!
