Or cut the French bread into half-inch rounds to make smoked salmon canapes for your next party. This recipe makes eight little salmon toasts, but you can double the amount by cutting the bread crosswise into 16 small half-inch rounds.

Its super easy! Just open up a ripe avocado and remove the pit. My favorite hack for removing the pit is using this method.
After removing the pit from the avocado, scoop it out into a bowl and add in freshly squeezed lemon juice and salt. Lemon and avocado have complementary flavors that are only enhanced by a little bit of salt . And voila! You have the foundation of your avocado taste. But, the best part is yet to come.
Hmmmmm Sliced Avocado On Avocado Toast
Youve probably seen avocado toast with mashed avocado, right? Even though sliced avocado isnt as common, we decided to go with sliced for this recipe because it so perfectly compliments the smoked salmon by adding an extra layer of texture.
The slicedavocado somehow adds to the luxurious feel of the whole smoked salmon and capers thing going on here.
I found that itâs easiest to slice the avocado by first cutting it in half. Then, I remove the pit. Leave the skin on the avocado, and place it flat-side down. Then, cut it into thin slices and remove the skin from each slice before fanning them all beautifully across the top of your toast.
And, super-important: dont forget to add a pinch of salt over top of the sliced avocado, before piling on the other ingredients .
If youâre really not feeling the whole âsliced avocadoâ thing, though, you can mash it up, too! If you go that route, Id recommend mixing the salt into the mashed avocado instead of sprinkling it on top.

Toast your bread. The easiest way is using a toaster, but you can also use a grill, oven or a dry pan. Then, add avocado. Make sure that your avocado is very ripe. You should be able to use a knife to spread it on your toast like butter. Then, simply add smoked salmon on top.
I like to also add some seasoning. Dried dill is great with salmon. Lemon juice, lemon pepper, mustard and horseradish sauce, sea salt and black pepper are also great.
In this recipe I have used freshly ground black pepper and dill. You can substitute these with whatever you prefer, or omit them altogether.

Smoked Salmon Avocado Toast With Pickled Onions And Chives
Yield: 1 open-faced toast
– 1-2 slices of smoked salmon- 1 tablespoon fresh chives, chopped – Salt and pepper, to taste
1. Thinly slice the red onion, then add to a small bowl and cover with vinegar. Stir to combine, then set aside for at least one hour. Tip: Pickled red onions will keep for several weeks in the fridge, so you can also prep a big batch of these ahead of time.
2. Halve the avocado, then remove the pit. Scoop the flesh into a small bowl, then mash until you reach your desired consistency. Season with a squeeze of lemon juice, a drizzle of olive oil, and salt and pepper to taste.
3. Set a slice of toast on a plate, then drizzle with olive oil. Top with a generous helping of avocado mash, then lay a slice or two of smoked salmon on top. Add one more squeeze of lemon juice and a sprinkle of salt, then garnish with a few slices of pickled red onion and chopped chives.
